INGREDIENTS
1 tablespoon olive oil
2 teaspoons lemon or lime juice
1 avocado, peeled and sliced
2 pink grapefruit, peeled and sectioned
1 small ripe papaya, peeled and sliced
2 spring onions, thinly sliced
4 cups mixed baby greens
1 tablespoon finely chopped coriander

DIRECTIONS
In a medium bowl, whisk together the oil and juice.
Add the avocado, grapefruit, papaya, and spring onions.
Toss gently to combine.
Cover and refrigerate for 1 hour.
Serve over a bed of the greens, sprinkled with the coriander.
